<title>Efecto del tiempo y temperatura de secado de cáscara de mashua negra (Tropaeolum tuberosum) en la extracción de  antocianinas y polifenoles</title>

La investigación tuvo como objetivo principal “Determinar el efecto del tiempo y&#13;
temperatura de secado de cáscara de mashua negra en la extracción de antocianinas y&#13;
polifenoles”, para ello, se obtuvo las cáscaras de la mashua negra a las cuales se le realizó&#13;
un secado a diferentes temperaturas y tratamientos (T1: 60°C/10h, T2: 70°C/8h y T3:&#13;
80°C/6h); luego de ello, se caracterizó fisicoquímicamente la harina obtenida, cuyos&#13;
resultados fueron T1 (pH 5,98, humedad 10,50%, cenizas 4,45%); T2 (pH 5,94, humedad&#13;
8,80%, cenizas 4,58%) y T3 (pH 5,91, humedad 10,50%, cenizas 7,30%). Por otro lado,&#13;
la cáscara de harina de mashua negra fue sometida a extracción de polifenoles y&#13;
antocianinas; con respecto a polifenoles totales, presentaron diferencias significativas,&#13;
puesto que el mayor valor obtenido correspondió al tratamiento T2 con 3498,38&#13;
mgEAG/100g, mientras que el menor valor obtenido se obtuvo del tratamiento T1 con&#13;
2731,30 mgEAG/100g; en el caso de las antocianinas, el mayor valor resultante fue el del&#13;
tratamiento T1 con un total de 165,20 mg/100g y el menor valor resultante fue el del&#13;
tratamiento T3 con un total de 83,00 mg/100g. De este modo, se identificaron las&#13;
condiciones de proceso óptimas para maximizar la recuperación de polifenoles totales y&#13;
antocianinas.; The main objective of this research was to determine the effect of drying time and&#13;
temperature on the extraction of anthocyanins and polyphenols from black mashua peel.&#13;
To this end, black mashua peels were obtained and dried at different temperatures and&#13;
under different treatments (T1: 60°C/10h, T2: 70°C/8h, and T3: 80°C/6h). The resulting&#13;
flour was then characterized physicochemically, with the following results: T1 (pH 5.98,&#13;
moisture 10.50%, ash 4.45%); T2 (pH 5.94, moisture 8.80%, ash 4.58%); and T3 (pH&#13;
5.91, moisture 10.50%, ash 7.30%). The black mashua peel flour was then subjected to&#13;
polyphenol and anthocyanin extraction. Regarding total polyphenols, significant&#13;
differences were observed, with the highest value obtained from treatment T2 at 3498.38&#13;
mg GAE/100g, while the lowest value was obtained from treatment T1 at 2731.30 mg&#13;
GAE/100g. For anthocyanins, the highest value was also obtained from treatment T1 at&#13;
165.20 mg/100g, and the lowest value was obtained from treatment T3 at 83.00 mg/100g.&#13;
Thus, the optimal processing conditions for maximizing the recovery of total polyphenols&#13;
and anthocyanins were identified.

En esta investigación se determinó la influencia de la harina de gandul, arroz y almidón de papa&#13;
sobre las propiedades físicas del pan molde y sus mezclas; en el cual se empleó un diseño de&#13;
mezclas con vértices extremos y restricciones de 15 – 35% en harina de gandul, 20 – 30% en&#13;
harina de arroz y 45 – 55% en almidón de papa, generando 14 tratamientos en el software&#13;
Statgraphics Centurion XIX. En las mezclas se evaluaron las propiedades reológicas de&#13;
empaste utilizando un reómetro compacto modular, registrando valores de la viscosidad pico&#13;
(63,84 - 98,65 cP), viscosidad mínima (1,43 - 6,64 cP) y viscosidad final (11,50 - 71,26 cP);&#13;
por otro lado, la textura instrumental del pan molde se evaluó en el analizador de textura&#13;
Brookfield, registrando valores de dureza (3,13 - 6,76 N), masticabilidad (1,08 - 3,72 N), y&#13;
&#13;
elasticidad (0,53 - 0,78); y en relación al color instrumental se utilizó el medidor de croma CR-&#13;
410, registrando valores en el color de la corteza, luminosidad (L*) (55,00 - 65,73),&#13;
&#13;
componente a* (4,32 - 11,85) y componente b* (27,71 - 37,28); y por último, en la miga se&#13;
registró luminosidad (L*) (59,77 - 64,30), componente a* de (–0,01 - 2,66) y componente b*&#13;
(19,62 - 24,08); concluyendo que existe influencia significativa debido a que la harina de&#13;
gandul redujo las viscosidades y la luminosidad, pero aumentó la dureza, masticabilidad y&#13;
elasticidad; la harina de arroz disminuyó la dureza y aumentó la luminosidad y los valores a*&#13;
(tonalidades rojizas) y b* (tonalidades amarillas); y el almidón de papa incrementó la&#13;
viscosidad y la luminosidad, mientras que su reducción disminuyó el componente b* (tonalidad&#13;
menos amarilla).; In this research, the influence of pigeon pea flour, rice flour, and potato starch on the physical&#13;
properties of sliced bread and their mixtures was determined; in which an extreme vertices&#13;
mixture design was employed with restrictions of 15–35% pigeon pea flour, 20–30% rice flour,&#13;
and 45–55% potato starch, generating 14 treatments using Statgraphics Centurion XIX&#13;
software. In the mixtures, the pasting rheological properties were evaluated using a modular&#13;
compact rheometer, recording values of peak viscosity (63,84–98,65 cP), minimum viscosity&#13;
(1,43–6,64 cP), and final viscosity (11,50–71,26 cP); on the other hand, the instrumental texture&#13;
of the sliced bread was evaluated using a Brookfield texture analyzer, recording values of&#13;
hardness (3,13–6,76 N), chewiness (1,08–3,72 N), and springiness (0,53–0,78). In relation to&#13;
instrumental color, a CR-410 chroma meter was used, recording in the crust values of lightness&#13;
(L*) (55,00–65,73), a* component (4,32–11,85), and b* component (27,71–37,28); and finally,&#13;
in the crumb, values of lightness (L*) (59,77–64,30), a* component (–0,01–2,66), and b*&#13;
component (19,62–24,08) were recorded. It was concluded that there is a significant influence,&#13;
since pigeon pea flour reduced viscosities and lightness but increased hardness, chewiness, and&#13;
springiness; rice flour decreased hardness and increased lightness and the a* (reddish tones)&#13;
and b* (yellowish tones) values; and potato starch increased viscosity and lightness, while its&#13;
reduction decreased the b* component (less yellowish tone).

El objetivo de esta investigación fue determinar la capacidad antioxidante (CA) y el&#13;
contenido de compuestos fenólicos totales (CFT) en diferentes partes del fruto (semilla,&#13;
arilos, cáscara y carpelos) de dos variedades de granada: Wonderful y Mollar. El estudio fue&#13;
de tipo cuantitativo, con diseño no experimental y alcance descriptivo-comparativo. Se&#13;
recolectaron 50 kg de granada de cada variedad en Jayanca (Perú) y se realizaron análisis&#13;
fisicoquímicos, de CA (método DPPH) y de CFT (método Folin-Ciocalteu). Los resultados&#13;
mostraron que la variedad Mollar presentó mayor capacidad antioxidante, destacando la&#13;
semilla con un 98,93% de inhibición, mientras que en la variedad Wonderful, el zumo&#13;
alcanzó el mayor porcentaje con 92,25%. En cuanto a los CFT, los carpelos de la variedad&#13;
Wonderful presentaron la mayor concentración (3793,8 ppm), superando a los de Mollar&#13;
(1694,1 ppm). Asimismo, se observaron diferencias en la proporción de estructuras del fruto:&#13;
Mollar tuvo mayor porcentaje de semilla (22,97%) y menor de carpelos (14,28%) frente a&#13;
Wonderful. Se concluyó que todas las partes del fruto poseen propiedades funcionales&#13;
destacadas, incluso aquellas considerados residuos, por lo que su aprovechamiento integral&#13;
resulta viable desde una perspectiva nutricional, tecnológica y ambiental.; The objective of this research was to determine the antioxidant capacity (AC) and the content&#13;
of total phenolic compounds (TPC) in different parts of the fruit (seed, arils, peel and carpels)&#13;
of two varieties of pomegranate: Wonderful and Mollar. The study was quantitative, with a&#13;
non-experimental design and descriptive-comparative scope. Fifty kg of pomegranate of each&#13;
variety were collected in Jayanca (Peru) and physicochemical, CA (DPPH method) and CFT&#13;
(Folin-Ciocalteu method) analyses were performed. The results showed that the Mollar&#13;
variety presented greater antioxidant capacity, with the seed standing out with 98.93%&#13;
inhibition, while in the Wonderful variety, the juice reached the highest percentage with&#13;
92.25%. In terms of CFT, the carpels of the Wonderful variety presented the highest&#13;
concentration (3793.8 ppm), surpassing those of Mollar (1694.1 ppm). Differences were also&#13;
observed in the proportion of fruit structures: Mollar had a higher percentage of seed&#13;
(22.97%) and a lower percentage of carpels (14.28%) compared to Wonderful. It was&#13;
concluded that all parts of the fruit have outstanding functional properties, even those&#13;
considered waste, so that their integral utilization is viable from a nutritional, technological&#13;
and environmental perspective.

<title>Efecto de la desinfección superficial sobre la estabilidad de filete de pollo  fresco (Gallus gallus domesticus) empacado al vacío</title>

El presente estudio tuvo como objetivo general evaluar el efecto de la desinfección&#13;
superficial sobre la estabilidad de filete de pollo fresco (Gallus gallus domesticus) empacado&#13;
al vacío. La investigación presentó enfoque cuantitativo y diseño experimental. Se analizaron&#13;
40 kg de filete de pollo, el cual fue deshuesado, sometido a tratamientos antioxidantes con&#13;
eritorbato de sodio (1%, 2% y 3% p/v) y antimicrobianos con nisina (150, 300 y 450 mg/l),&#13;
seguido de envasado al vacío y refrigeración. Se midieron el color instrumental, el índice de&#13;
peróxidos, así como el recuento de aerobios mesófilos y Salmonella spp. Posteriormente,&#13;
muestras con la concentración óptima de cada aditivo, junto con distintos tiempos de&#13;
almacenamiento a 10 °C (4, 8, 12, 16 y 20 días), también fueron evaluadas. El filete de pollo&#13;
fresco obtuvo una humedad de 70.78%, cenizas 1.49%, carbohidratos 1.77%, acidez 0.09%,&#13;
pH 6.38, grasas 3.84% y proteínas 22.12%. Las concentraciones con 3% de eritorbato de sodio&#13;
y con 300 mg/l de nisina mostraron mejor efecto sobre la estabilidad del filete de pollo. La&#13;
aplicación conjunta de eritorbato de sodio (3%) y nisina (300 mg/L) mantuvo la estabilidad&#13;
oxidativa y microbiológica del filete de pollo fresco empacado al vacío. Este tratamiento redujo&#13;
significativamente la formación de peróxidos y la carga microbiana, sin presencia de&#13;
Salmonella sp. Además, alteró significativamente la luminosidad y el tono b* del filete,&#13;
evidenciando cambios de color durante el almacenamiento. El parámetro a* solo varió por&#13;
efecto del tiempo, sin diferencias entre tratamientos.; The present study aimed to evaluate the effect of surface disinfection on the stability of&#13;
fresh chicken fillet (Gallus gallus domesticus) packaged under vacuum. The research employed&#13;
a quantitative approach and an experimental design. A total of 40 kg of chicken fillet was&#13;
analyzed; it was deboned and subjected to antioxidant treatments with sodium erythorbate (1%,&#13;
2%, and 3% w/v) and antimicrobial treatments with nisin (150, 300, and 450 mg/L), followed&#13;
by vacuum packaging and refrigeration. Instrumental color, peroxide index, mesophilic aerobic&#13;
counts, and Salmonella spp. were measured. Subsequently, samples containing the optimal&#13;
concentration of each additive, along with different storage times at 10 °C (4, 8, 12, 16, and 20&#13;
days), were also evaluated. The fresh chicken fillet showed 70.78% moisture, 1.49% ash,&#13;
1.77% carbohydrates, 0.09% acidity, pH 6.38, 3.84% fat, and 22.12% protein. Treatments with&#13;
3% sodium erythorbate and 300 mg/L nisin presented the best effect on fillet stability. The&#13;
combined application of sodium erythorbate (3%) and nisin (300 mg/L) preserved the oxidative&#13;
and microbiological stability of vacuum-packaged fresh chicken fillet. This treatment&#13;
significantly reduced peroxide formation and microbial load, with no presence of Salmonella&#13;
sp. In addition, it significantly altered fillet luminosity and b* tone, indicating color changes&#13;
during storage. The a* parameter varied only as a function of time, with no differences between&#13;
treatments.
