La cadena productiva del ganado vacuno en el Camal Municipal de Chota, Cajamarca

Abstract

Vacunos, adultos, ambos sexos, fueron sacrificados en el Camal Municipal de Chota, Cajamarca, entre los años 2012 y 2015, registrados en la planilla de dicha institución fueron analizados en distintos factores. Del total de animales beneficiados, se encontró que el 71.01% fueron hembras y el 28.99% correspondieron a machos. Los pesos vivos, al sacrificio, fueron en promedio, de 194.850 kg en machos y 207.500 kg en hembras, con pesos de carcasa de 99.995 kg y 202.500 kg, correspondiéndoles 51.31 y 49.65% de canal, con referencia al peso vivo, en machos y hembras, respectivamente. Económicamente, se determinó que la carcasa representaba el 87.4%, la menudencia limpia el 7.96%, el hígado el 2.82% y el corazón fue de 1.82% del total del movimiento registrado en dicho establecimiento. En base a los parámetros de carcasa, sus precios, y la población del distrito de Chota, departamento de Cajamarca, se estimó que el consumo de carne/per cápita/año fue de 19.604 kg, equivalente a 1.634 kg/mes y de 0.054 kg/per cápita/día.

Cattle, adults, both sexes, were slaughtered in the Municipal Camal of Chota, Cajamarca, between the years 2012 and 2015, registered in the form of said institution and analyzed in different factors. The live weights at slaughter were, on average, 194,850 kg in males and 207,500 kg in females, with carcass weights of 99,995 kg and 202,500 kg, corresponding to 51.31 and 49.65% of the carcass, with reference to the live weight, in males and females, respectively. Economically, it was determined that the carcass represented 87.4%, the cleaned giblets 7.96%, the liver 2.82% and the heart was 1.82% of the total movement registered in said establishment. Based on the carcass parameters, their prices, and the population of the district of Chota, department of Cajamarca, it was estimated that meat consumption/per capita/year was 19,604 kg, equivalent to 1,634 kg/month and 0.054 kg /per capita/day.
