| dc.description.abstract | El objetivo de esta investigación fue determinar la capacidad antioxidante (CA) y el contenido de compuestos fenólicos totales (CFT) en diferentes partes del fruto (semilla, arilos, cáscara y carpelos) de dos variedades de granada: Wonderful y Mollar. El estudio fue de tipo cuantitativo, con diseño no experimental y alcance descriptivo-comparativo. Se recolectaron 50 kg de granada de cada variedad en Jayanca (Perú) y se realizaron análisis fisicoquímicos, de CA (método DPPH) y de CFT (método Folin-Ciocalteu). Los resultados mostraron que la variedad Mollar presentó mayor capacidad antioxidante, destacando la semilla con un 98,93% de inhibición, mientras que en la variedad Wonderful, el zumo alcanzó el mayor porcentaje con 92,25%. En cuanto a los CFT, los carpelos de la variedad Wonderful presentaron la mayor concentración (3793,8 ppm), superando a los de Mollar (1694,1 ppm). Asimismo, se observaron diferencias en la proporción de estructuras del fruto: Mollar tuvo mayor porcentaje de semilla (22,97%) y menor de carpelos (14,28%) frente a Wonderful. Se concluyó que todas las partes del fruto poseen propiedades funcionales destacadas, incluso aquellas considerados residuos, por lo que su aprovechamiento integral resulta viable desde una perspectiva nutricional, tecnológica y ambiental. | es_PE |
| dc.description.abstract | The objective of this research was to determine the antioxidant capacity (AC) and the content of total phenolic compounds (TPC) in different parts of the fruit (seed, arils, peel and carpels) of two varieties of pomegranate: Wonderful and Mollar. The study was quantitative, with a non-experimental design and descriptive-comparative scope. Fifty kg of pomegranate of each variety were collected in Jayanca (Peru) and physicochemical, CA (DPPH method) and CFT (Folin-Ciocalteu method) analyses were performed. The results showed that the Mollar variety presented greater antioxidant capacity, with the seed standing out with 98.93% inhibition, while in the Wonderful variety, the juice reached the highest percentage with 92.25%. In terms of CFT, the carpels of the Wonderful variety presented the highest concentration (3793.8 ppm), surpassing those of Mollar (1694.1 ppm). Differences were also observed in the proportion of fruit structures: Mollar had a higher percentage of seed (22.97%) and a lower percentage of carpels (14.28%) compared to Wonderful. It was concluded that all parts of the fruit have outstanding functional properties, even those considered waste, so that their integral utilization is viable from a nutritional, technological and environmental perspective. | es_PE |
