Influencia de larvas deshidratadas molidas de Hermetia illucens de 15 días sobre la calidad microbiológica de carne de cuy (Cavia porcellus) de 30 y 70 días de edad
Resumen
Del 10 de febrero al 23 de abril de 2025, en el distrito La Victoria, provincia de Chiclayo, región
Lambayeque, se evaluó la influencia de larvas deshidratadas molidas de Hermetia illucens de 15
días (LDMHI15), incluidas al 10% en el alimento balanceado, sobre la calidad microbiológica de
la carne de cuy sacrificados a los 30 y 70 días de edad (c-30d y c-70d). Se evaluaron cuatro
tratamientos: T1, c-30d sin LDMHI15; T2, c-30d con LDMHI15; T3, c-70d sin LDMHI15; y T4,
c-70d con LDMHI15. Cada tratamiento incluyó 20 cuyes machos destetados, crías de raza
mejorada con Perú, distribuidos en cuatro repeticiones. Se evaluaron recuentos bacterianos y
frecuencia de ocurrencia de bacterias gramnegativas, patógenas y grampositivas, contaminación
fúngica con mohos y levaduras, así como la presencia de insectos, estadios inmaduros, gusanos o
nematodos. Se utilizó un diseño completamente al azar con arreglo factorial 2x2, aplicándose
ANAVA de Welch y Kruskal-Wallis. T1 y T2 presentaron mayores recuentos bacterianos totales
y alta presencia de Bacillus sp., sin presencia de bacterias gramnegativas ni contaminación
fúngica. En T3 y T4 se detectaron E. coli sp y Enterobacter sp.; Proteus sp. sólo se presentó en
T3. Salmonella sp. y Shigella sp. estuvieron ausentes en todos los tratamientos. No se hallaron
mohos; la levadura Pichia sp. sólo apareció en T3 y T4. Tampoco se hallaron insectos, estadios
inmaduros, gusanos ni nematodos en ningún tratamiento. Se concluye que la inclusión de
LDMHI15 no afectó la calidad microbiológica de la carne de cuy en las edades evaluadas. From February 10 to April 13, 2025, in the district of La Victoria, province of Chiclayo,
Lambayeque region, the influence of ground dehydrated larvae of Hermetia illucens of 15 days
(LDMHI15), included at 10% in the balanced feed, on the microbiological quality of guinea pig
meat slaughtered at 30 and 70 days of age (c-30d and c-70d) was evaluated. Four treatments were
evaluated: T1, c-30d without LDMHI15; T2, C-30D with LDMHI15; T3, C-70D without
LDMHI15; and T4, c-70d with LDMHI15. Each treatment included 20 weaned male guinea pigs,
offspring of a breed improved with Peru, distributed in four replications. Bacterial counts and
frequency of occurrence of gram-negative, pathogenic and gram-positive bacteria, fungal
contamination with molds and yeasts, as well as the presence of insects, immature stages, worms
or nematodes were evaluated. A completely randomized design with a 2x2 factorial arrangement
was used, applying Welch's ANAVA and Kruskal-Wallis. T1 and T2 had higher total bacterial
counts and a high presence of Bacillus sp., without the presence of gram-negative bacteria or
fungal contamination. E. coli sp and Enterobacter sp. were detected in T3 and T4; Proteus sp. it
was only presented in T3. Salmonella sp. and Shigella sp. they were absent in all treatments. No
molds were found; the yeast Pichia sp. it only appeared in T3 and T4. Nor were any insects,
immature stages, worms or nematodes found in any treatment. It is concluded that the inclusion
of LDMHI15 did not affect the microbiological quality of guinea pig meat at the ages evaluated.
