La investigación tuvo como objetivo principal “Determinar el efecto del tiempo y
temperatura de secado de cáscara de mashua negra en la extracción de antocianinas y
polifenoles”, para ello, se obtuvo las cáscaras de la mashua negra a las cuales se le realizó
un secado a diferentes temperaturas y tratamientos (T1: 60°C/10h, T2: 70°C/8h y T3:
80°C/6h); luego de ello, se caracterizó fisicoquímicamente la harina obtenida, cuyos
resultados fueron T1 (pH 5,98, humedad 10,50%, cenizas 4,45%); T2 (pH 5,94, humedad
8,80%, cenizas 4,58%) y T3 (pH 5,91, humedad 10,50%, cenizas 7,30%). Por otro lado,
la cáscara de harina de mashua negra fue sometida a extracción de polifenoles y
antocianinas; con respecto a polifenoles totales, presentaron diferencias significativas,
puesto que el mayor valor obtenido correspondió al tratamiento T2 con 3498,38
mgEAG/100g, mientras que el menor valor obtenido se obtuvo del tratamiento T1 con
2731,30 mgEAG/100g; en el caso de las antocianinas, el mayor valor resultante fue el del
tratamiento T1 con un total de 165,20 mg/100g y el menor valor resultante fue el del
tratamiento T3 con un total de 83,00 mg/100g. De este modo, se identificaron las
condiciones de proceso óptimas para maximizar la recuperación de polifenoles totales y
antocianinas. The main objective of this research was to determine the effect of drying time and
temperature on the extraction of anthocyanins and polyphenols from black mashua peel.
To this end, black mashua peels were obtained and dried at different temperatures and
under different treatments (T1: 60°C/10h, T2: 70°C/8h, and T3: 80°C/6h). The resulting
flour was then characterized physicochemically, with the following results: T1 (pH 5.98,
moisture 10.50%, ash 4.45%); T2 (pH 5.94, moisture 8.80%, ash 4.58%); and T3 (pH
5.91, moisture 10.50%, ash 7.30%). The black mashua peel flour was then subjected to
polyphenol and anthocyanin extraction. Regarding total polyphenols, significant
differences were observed, with the highest value obtained from treatment T2 at 3498.38
mg GAE/100g, while the lowest value was obtained from treatment T1 at 2731.30 mg
GAE/100g. For anthocyanins, the highest value was also obtained from treatment T1 at
165.20 mg/100g, and the lowest value was obtained from treatment T3 at 83.00 mg/100g.
Thus, the optimal processing conditions for maximizing the recovery of total polyphenols
and anthocyanins were identified.
