La presente investigación tiene como objetivo determinar la variación del contenido
de fenoles totales y betalaínas durante el proceso productivo y de almacenamiento de néctar
de tuna (Opuntia ficus indica). Se realizó una caracterización fisicoquímica de la materia
prima (tuna roja) para ver su composición. Para este estudio se utilizó un diseño
completamente al azar, para determinar la variación del contenido de fenoles totales y
betalaínas, durante tres etapas del proceso productivo (pre-cocción, pasteurización y
envasado) y almacenamiento de néctar de tuna. También se realizó el modelo cinético de
mayor ajuste a la variación de fenoles totales y betalaínas durante almacenamiento por 6 días.
Al final del estudio se obtuvo como resultado que la tuna roja obtuvo una humedad de
79.43%, proteínas 1.59%, lípidos 0.1%, carbohidratos 14.66%, fibra 3.75%, ceniza 0.5%,
betacianinas 15.40 mg EB/100 mL de muestra, betaxantinas 25.60 mg EB/100 mL de muestra
y fenoles totales 158.542 mg EAG/100 mL de muestra. Los mejores parámetros para la
obtención de néctar de tuna son de 100oC en la pre-cocción, 85oC en la pasteurización y 85oC
en el envasado. El modelo cinético de mayor ajuste a la variación de fenoles totales y
betalaínas es el de primer orden, obteniéndose un 95%, la degradación de los fenoles totales,
un 92% la degradación de betacianinas y en un 96% las betaxantinas del néctar de tuna
durante su almacenamiento. Finalmente, el tiempo de vida media para fenoles totales,
betacianinas y betaxantinas fue en promedio de 2; 1 y 2 respectivamente. The present investigation aims to determine the variation of the content of total
phenols and betalains during the production process and storage of prickly pear nectar
(Opuntia ficus indica). A physicochemical characterization of the raw material (red prickly
pear) was carried out to see its composition. For this study, a completely randomized design
was used to determine the variation in the content of total phenols and betalains, during three
stages of the production process (pre-cooking, pasteurization and packaging) and storage of
prickly pear nectar. The kinetic model of the best fit to the variation of total phenols and
betalains during storage for 6 days was also carried out. At the end of the study, the result
was that the red prickly pear obtained a humidity of 79.43%, proteins 1.59%, lipids 0.1%,
carbohydrates 14.66%, fiber 3.75%, ash 0.5%, betacyanins 15.40 mg EB/100 mL of sample,
betaxanthins 25.60 mg EB/100 mL of sample and total phenols 158.542 mg EAG/100 mL of
sample. The best parameters for obtaining prickly pear nectar are 100oC in pre-cooking, 85oC
in pasteurization and 85oC in packaging. The kinetic model with the best fit to the variation
of total phenols and betalains is the first order, obtaining 95% degradation of total phenols,
92% degradation of betacyanins and 96% betaxanthins from prickly pear nectar. during
storage. Finally, the half-life time for total phenols, betacyanins and betaxanthins was on
average 2; 1 and 2 respectively.
