The present investigation aims to determine the variation of the content of total phenols and betalains during the production process and storage of prickly pear nectar (Opuntia ficus indica). A physicochemical characterization of the raw material (red prickly pear) was carried out to see its composition. For this study, a completely randomized design was used to determine the variation in the content of total phenols and betalains, during three stages of the production process (pre-cooking, pasteurization and packaging) and storage of prickly pear nectar. The kinetic model of the best fit to the variation of total phenols and betalains during storage for 6 days was also carried out. At the end of the study, the result was that the red prickly pear obtained a humidity of 79.43%, proteins 1.59%, lipids 0.1%, carbohydrates 14.66%, fiber 3.75%, ash 0.5%, betacyanins 15.40 mg EB/100 mL of sample, betaxanthins 25.60 mg EB/100 mL of sample and total phenols 158.542 mg EAG/100 mL of sample. The best parameters for obtaining prickly pear nectar are 100oC in pre-cooking, 85oC in pasteurization and 85oC in packaging. The kinetic model with the best fit to the variation of total phenols and betalains is the first order, obtaining 95% degradation of total phenols, 92% degradation of betacyanins and 96% betaxanthins from prickly pear nectar. during storage. Finally, the half-life time for total phenols, betacyanins and betaxanthins was on average 2; 1 and 2 respectively.es_PE
